Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Croquettes of Chicken

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the filling

  1. In a bowl, combine the minced chicken, ham, chopped mushrooms, and parsley.

  2. Season the mixture with salt and cayenne pepper.

  3. In a saucepan, melt the butter over medium heat.

  4. Stir in the flour and cook for 1 minute.

  5. Gradually add the milk, stirring until smooth to create a panada.

  6. Mix the panada with the chicken mixture.

  7. Let the mixture cool on a plate.

Shape the croquettes

  1. Roll out the pastry thinly.

  2. Cut the pastry into circles using a cutter.

  3. Place a small amount of the chicken mixture in the center of each pastry circle.

  4. Wet the edges of the pastry circles with water.

  5. Fold the pastry over the filling.

  6. Press the edges to seal.

Coat, fry and serve

  1. Dip each croquette in beaten egg.

  2. Coat the croquette with fine breadcrumbs.

  3. Fry the croquettes in hot oil until golden brown.

  4. Drain the croquettes on paper towels.

  5. Arrange the croquettes on a serving dish.

  6. Garnish with fresh parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold chicken
Forms the main body of the filling, giving it savoury flavour and substance.
Butter
Enriches the panada and carries flavour into the filling.
Flour
Thickens the milk with butter into a panada that binds the filling together.
Milk
Liquid that gelatinises with the flour to form a smooth, cohesive panada.
Ham
Adds salty, savoury flavour to the chicken filling.

The step that matters

Cooling the filling before shaping. The panada must be cool and firm enough to hold its shape. A warm, soft filling will spread, burst through the pastry, or leak fat during frying.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, ham, mushroom, butter, flour, milk, pepper):

  1. Thymefits better
  2. Marjoramfits about as well
  3. Parsleythe original
  4. Garlicfits about as well

Fit is the average pairing score against chicken, ham, mushroom, butter, flour, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
