Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Spread the puff pastry over the sides and edge of a deep pie plate, leaving the bottom unlined.

  3. Drain the liquor from the oysters and place the oysters in a pan.

Make the filling

  1. Season the oysters with pepper, coarse sea salt, spice, and butter.

  2. Add the chopped egg yolks and grated bread crumbs to the oysters.

  3. Pour the oyster mixture into the pie dish.

Bake and serve

  1. Roll out the lid of the pie and sprinkle a little flour on top.

  2. Add the cream, then cover with the lid.

  3. Bake until the crust is golden.
