Baked Tomatoes with Corn

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove a slice from the top of each tomato and scoop out the centers.

  2. Cut the tops off the kernels from the ears of corn and scrape out the pulp, leaving the hulls.

  3. Sprinkle a little coarse sea salt inside the tomatoes.

  4. Mix the corn pulp with a little coarse sea salt, paprika, and butter.

  5. Replace the tops of the tomatoes and place them in a buttered baking dish.

  6. Bake in a 350°F (175°C) oven until the tomatoes are soft.
