Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Pat the Clams

Ingredients

Directions

  1. Place the clams in a steamer, flat side down, to retain their juice.

  2. Set the steamer over a pot of boiling water, cover tightly, and steam for 30 minutes.

  3. Check if the shells have opened; if not, steam for an additional 10 minutes.

  4. Remove the clams, pry off the top shells, and arrange the bottom shells on a flat dish.

  5. In a bowl, mix butter, lemon juice, chopped parsley, salt, and cayenne to make a sauce.

  6. Spoon the sauce over the clams and serve hot with warmed crackers.
