Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Split the chicken down the back and remove the intestines.

  2. Wipe the chicken with a damp towel and lay it inside down in a baking pan.

  3. Break the breastbone to make it lie flat.

  4. Spread the breast with butter and dredge with pepper.

  5. Add water and a little salt to the bottom of the pan.

Bake

  1. Bake in a 400°F (200°C) oven covered with another pan for 30 minutes, basting every 10 minutes.

  2. Turn the chicken, baste the inside well, and bake for another 30 minutes.

  3. Place the cooked chicken on a hot dish.

Make the gravy and serve

  1. In the pan, add flour and stir until smooth and brown.

  2. Add milk or cream and stir until it boils, then season with salt and pepper to taste.

  3. Serve the gravy in a boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the breast with fat, helping it brown and keeping the meat moist as it bakes.
Flour
Thickens the pan juices with starch, forming a smooth gravy when stirred into the drippings.
Milk or cream
Adds liquid and richness to the gravy, which thickens as it comes to a boil.

The step that matters

Adding the milk or cream to the flour. Flour must be cooked briefly in the pan fat before liquid is added, and the liquid should be added gradually while stirring, so the starch hydrates evenly without lumps.
