Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter, while whipped whites add air that lightens the waffles.
Flour
Forms the gluten network that gives the waffles their structure.
Butter
Adds fat for tenderness and flavor, and helps the waffles brown.
Baking powder
Releases gas in the batter to make the waffles rise and turn light.
Sweet milk
Provides the liquid that hydrates the flour and forms the batter.

The step that matters

Folding in the beaten egg whites. Whites should be beaten to stiff peaks and folded gently so the air is kept. Overmixing deflates the foam, and the waffles come out denser instead of light.
