Coffee

Ingredients

Directions

Prepare the coffee

  1. Mix equal parts of Mocha and Java coffee.

  2. Add 1 heaping tablespoon of coffee for each person plus 1 extra for the pot.

  3. Mix 1 egg with the coffee grounds.

  4. Pour boiling water over the coffee grounds, enough to cover them.

Brew

  1. Let the coffee froth, then stir down the grounds and let it boil for 5 minutes.

  2. Remove from heat and let it stand for 5 to 10 minutes to keep hot, but not boiling.

  3. Add the remaining boiling water.

Make the cream substitute

  1. To substitute for cream, beat the egg white with a small lump of butter, then gradually pour in the coffee while stirring to prevent curdling.

What each ingredient does

Egg
Helps settle the grounds and clarify the coffee as it sets during brewing.
Butter
Adds richness and body to the egg white mixture used as a cream substitute.

The step that matters

Gradually pour in the coffee while stirring. Adding hot coffee to the beaten egg white too quickly can scramble the egg and cause curdling. Pouring slowly while stirring keeps the egg mixture smooth.
