Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness to the batter as they set during cooking.
Flour
Forms the gluten network that gives the pudding its body and structure.
Yeast
Produces gas during the rise, making the batter light and airy.
Milk
Hydrates the flour and adds moisture and tenderness.
Huckleberries
Add moisture, sweetness, and tart fruit flavor throughout the pudding.

The step that matters

Dredge the berries in flour before stirring them in. Flour coating helps keep berries suspended in the batter instead of sinking to the bottom of the mold as the pudding cooks.
