What each ingredient does

Cauliflower
Boiling softens its dense florets into a tender, mild vegetable that holds its shape.
Butter
Adds richness and fat, coating the cooked cauliflower and carrying flavor.

The step that matters

Removing from heat after 20 minutes. Cauliflower keeps cooking in its own residual heat, and extended boiling breaks down its cell walls, leaving it soft, waterlogged and mushy. Timing the removal matters for a firm, tender result.
