What each ingredient does

Pearl barley
Swells as it cooks, thickening the broth and giving it a chewy texture.
Mutton or veal
Releases gelatin and flavor into the broth during long, slow cooking.
Veal knuckle
Its bones add collagen, giving the broth body and a rich mouthfeel.
Onion
Fried to brown, it adds sweetness and deep savory aroma to the broth.

The step that matters

Skimming off the fat after chilling. Fat that has cooled overnight rises and solidifies on the surface, so it lifts off cleanly. Leaving it in makes the broth greasy.

Swap the onion

How well each one fits the dish's main ingredients (mutton, veal, carrot, pepper, barley):

  1. Leekfits better
  2. Turnipfits better
  3. Capsicumfits better
