Crab a LA Francaise

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Layer crab in a baking dish or ramekins.

  3. Spread a little home-made mustard, cayenne pepper, chopped parsley, and coarse sea salt over the crab.

  4. Pour enough cream sauce over the first layer to cover.

  5. Add another layer of crab until the dish is filled.

  6. Sift cracker crumbs over the top.

  7. Dot with bits of butter and bake until light brown.

  8. To make the cream sauce, melt a lump of butter in a saucepan.

  9. Add 1 tablespoon of flour and stir over moderate heat.

  10. Gradually add milk until the sauce is moderately thick.
