What each ingredient does

Oysters
Provide the main seafood flavor and tender bite that define the dish.
Eggs (in the method)
Thicken the mixture as they set with gentle heat, giving it body.
Cheese
Melts into the sauce, adding richness and savory flavor.
Butter
Adds fat for a smooth texture and rich mouthfeel.
Oyster liquor
Adds briny moisture and concentrated oyster flavor to the sauce.
Bread crumbs
Absorb liquid and help lend body to the sauce.

The step that matters

Stir constantly over boiling water until the eggs thicken. Eggs set into a smooth custard when heated gently, but too much heat or too little stirring can scramble them into curds. Keeping the pan over simmering water, not boiling directly, and stirring constantly keeps the mixture silky.

Swap the mustard
