Forcemeat for Hare

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a bowl, combine the ham or bacon, suet, lemon rind, parsley, sweet herbs, and seasonings.

  2. Blend in the bread crumbs thoroughly before adding the eggs.

  3. Mix in the beaten eggs with the other ingredients until well combined.

  4. Form the mixture into balls.

  5. Fry the balls in boiling lard or place them on a tin and bake in a 400°F (200°C) oven.

  6. Optionally, boil the hare's liver for 5 minutes, mince it finely, and add it to the mixture.
