What each ingredient does

Ham
Serves as the main body of the dish, holding the stuffing and glaze.
Chopped meat or chicken
Adds savory filling and substance to the stuffing mixture.
Cracker crumbs
Absorb the broth and bind the stuffing so it holds together.
Brown sugar
Adds sweetness and helps the glaze caramelize and brown in the oven.
Flour
Thickens the glaze paste so it clings to the ham's surface.

The step that matters

Basting with sherry while baking. Sherry added during baking moistens the surface and helps the sugar glaze brown evenly without drying or scorching. Basting regularly keeps the ham juicy as it cooks.
