What each ingredient does

Sweetbreads
Provide the main meat, which turns tender and golden when fried in butter.
Broth
Forms the liquid base of the sauce, which concentrates as it reduces.
Flour
Thickens the sauce so it clings to the sweetbreads.
Mushrooms
Add earthy flavor and savory depth to the sauce.
Port
Adds sweetness and depth to the sauce as it simmers.
Truffles
Contribute a strong, aromatic earthy flavor to the sauce.

The step that matters

Reducing the broth by half. Boiling concentrates the flavor of the broth and builds body in the sauce. Boiling too briefly leaves it thin and weak, while over-reducing can make it salty and sticky.

Swap the mace

How well each one fits the dish's main ingredients (butter, onion, clove, mushroom, truffle, flour, ketchup):

  1. Thymefits better
  2. Nutmegfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against butter, onion, clove, mushroom, truffle, flour, ketchup. Candidates are from the same food group and used in at least 100 recipes.
