Baked Stuffed Cucumbers

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Cut the cucumbers in half lengthwise and scoop out the seeds and pulp, leaving the outer shell intact.

Stuff and bake

  1. In a bowl, combine the cucumber pulp, salt, pepper, chopped chile peppers, tomato, and bread crumbs. Mix well.

  2. Fill each cucumber shell with the stuffing and top with butter.

  3. Bake for 1 hour until the stuffing is hot and browned.

What each ingredient does

Cucumbers
Form the edible shell that holds the stuffing and softens as it bakes.
Bread crumbs
Absorb the moisture from the pulp and tomato, giving the stuffing body and helping it brown.
Tomato
Adds moisture and acidity that keep the stuffing from drying out in the oven.
Butter
Adds fat that promotes browning on the stuffing's surface and enriches flavor.
Green chile peppers
Add heat and fresh, sharp flavor to the stuffing.

The step that matters

Scooping out the cucumbers. Leaving the outer shell intact and not piercing it keeps the cucumber able to hold the stuffing. Removing too much pulp weakens the shell, while leaving the seeds in adds excess water that can make the filling soggy.
