Tomato Souffle

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. In a saucepan, mix the tomato pulp, butter, grated cheese, boiled macaroni, bread crumbs, and prepared mustard.

  2. Stir over medium heat until boiling, then remove from heat and let cool.

  3. Add the egg yolks and mix well.

Bake and serve

  1. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the mixture.

  2. Pour the mixture into a baking dish and top with grated Parmesan cheese.

  3. Bake in a preheated oven at 400°F (200°C) until golden and puffed.

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air and make the soufflé rise and turn light.
Egg yolks
Enrich the base and help set the mixture as it bakes.
Tomato pulp
Supplies the main flavour and moisture of the soufflé base.
Grated cheese
Adds richness and flavour, and helps the base hold together.
Bread crumbs
Absorb liquid and give the base body so it holds its structure.
Butter
Adds fat for richness and a smoother, tender texture.

The step that matters

Folding in the egg whites. Whites must be beaten to stiff peaks and folded gently, because deflating the foam removes the air that makes the soufflé rise.
