The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture as they set over heat, giving the cream its body.
Orange juice
Provides the main citrus flavor and acidity that balances the sugar.
Sugar
Sweetens the cream and helps balance the tartness of the orange juice.
Egg whites
Whipped and spooned on top, they form a light, airy topping.
Grated orange rind
Adds aromatic orange oil flavor to the topping.

The step that matters

Stir the mixture over boiling water until it thickens. Egg yolks thicken as their proteins set with gentle heat. If the heat is too high or stirring stops, the yolks can scramble and turn grainy instead of smooth.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
