What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable body as it cools.
Rich cream
Adds fat for a smooth, rich, velvety mouthfeel.
Sugar
Provides sweetness that balances the wine.
Wine
Adds the main flavour and a touch of acidity.

The step that matters

Allow the mixture to cool slightly before stirring in the cream. Cream added to a very hot mixture can separate or turn grainy because its fat and proteins are sensitive to high heat. Cooling it slightly keeps the cream smooth and helps the gelatine set evenly.
