What each ingredient does

Green tomatoes
Form the bulk of the pickle, with salting drawing out moisture so they firm up.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Sugar
Balances the sharp vinegar with sweetness and helps thicken the syrup as it cooks.
Onions
Add savoury depth and body to the pickle as they cook down.

The step that matters

Cook until the mixture thickens. Cooking drives off excess water and lets the sugar and vinegar reduce into a thick syrup. Stopping too early leaves the pickle runny, while cooking too long can make the tomatoes mushy.

Swap the onion

How well each one fits the dish's main ingredients (tomato, vinegar, sugar, mustard, cinnamon, clove):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Cucumberfits better
  4. Onionthe original

Fit is the average pairing score against tomato, vinegar, sugar, mustard, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
