Bread Sticks

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Melt the butter in the milk.

  2. Dissolve the yeast in the cold water.

  3. Beat the egg white to a stiff froth.

  4. Combine all ingredients with the flour and knead well.

  5. Let the dough rise overnight.

Shape and bake

  1. In the morning, divide the dough into balls the size of large walnuts.

  2. Roll each ball into sticks about 1 foot long.

  3. Place the sticks 2 inches apart on long pans.

  4. Let them rise for 30 minutes in a cool place.

  5. Bake for 25 minutes at 350°F (175°C) until dry and crisp.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the dough its structure and chew.
Yeast
Ferments the dough, producing gas that makes it rise and become light.
Butter
Adds fat, which tenderises the crumb and adds richness to the sticks.
Milk
Adds moisture and milk solids that aid softness and gentle browning.
Egg white
Beaten to a froth, it adds lightness and helps the sticks set and crisp.
Sugar
Feeds the yeast and adds sweetness and some browning in the oven.

The step that matters

Baking until dry and crisp. Bread sticks need enough time in the oven to drive out moisture; underbaking leaves them soft and chewy instead of crisp and shelf-stable.
