Candied Violets

Ingredients

Directions

Prepare the violets

  1. Select the desired quantity of perfect sweet violets.

  2. Spread the violets on an inverted sieve to air dry slightly, but not crisp.

Make the sugar coating

  1. Make a syrup by boiling ½ pound of granulated sugar with ½ pint of water until it spins a thread.

  2. Dip each violet by the stem into the hot syrup.

  3. Place the dipped violets back on the oiled inverted sieve.

  4. Let the violets sit for several hours.

  5. If they look dry, dip them again.

Finish and harden

  1. Melt ½ cup of fondant, add 2 drops of essence of violet and enough water to achieve a thin, grayish color.

  2. Dip each violet into the fondant one at a time.

  3. Dust each violet with sifted crystallized sugar.

  4. Place the coated violets on oiled paper to harden.

What each ingredient does

Granulated sugar
Forms a syrup that coats the violets and hardens into a crisp, sweet shell.
Fondant
Adds a smooth, sugary outer layer that sets over the violets.
Perfect sweet violets
Provide the flower being candied, whose delicate petals hold the syrup coating.

The step that matters

Boiling the syrup to the thread stage. Sugar syrup must reach the point where it spins a thread so that it cools into a firm, crisp coating. Undercooked syrup stays sticky and soft, while overcooked syrup becomes brittle and may crack or turn bitter.
