Deviled Crab

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix crab meat with melted butter, mustard, Worcestershire sauce, salt, and pepper.

  3. Add breadcrumbs and lemon juice, mixing well.

Bake and serve

  1. Spoon the mixture into crab shells or a baking dish.

  2. Sprinkle paprika on top.

  3. Bake for 20 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab meat
Forms the main body of the filling and provides the dish's flavour.
Butter
Adds richness and moisture, and helps the top turn golden in the oven.
Breadcrumbs
Absorb liquid and give the filling a soft, binding texture.
Mustard
Adds sharp, pungent flavour that balances the richness of the crab and butter.
Lemon juice
Adds acidity that brightens the flavour of the crab.

The step that matters

Bake for 20 minutes until golden brown. Baking too long dries out the crab and toughens the filling, while too short a time leaves it underset and pale. Watching for golden colour shows when browning from the milk proteins and fat is complete.

Swap the lemon

How well each one fits the dish's main ingredients (crab, meat, butter, mustard, sauce, pepper):

  1. Avocadofits about as well
  2. Lemonthe original
  3. Limefits about as well
  4. Coconutfits less well

Fit is the average pairing score against crab, meat, butter, mustard, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
