Ingredients

Directions

Prepare the stock

  1. Cut the meat into small pieces and soak with the bone in cold water for 1 hour.

  2. Cook gently for 3 hours, then add the finely chopped vegetables and seasonings.

  3. Cook for 2 hours longer; strain, cool, remove fat, and clarify.

  4. If desired, heat several pieces of lemon rind with the stock for added flavor.

Notes

  1. Browning part of the meat and vegetables improves the color and flavor of the stock.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat and bone
Releases gelatin and savory flavor into the water, giving the stock body and taste.
Egg white
Clarifies the stock by trapping fine particles as it cooks, leaving it clear.
Onion
Adds aromatic sweetness and depth to the stock as it simmers.
Carrots
Contribute natural sweetness and savory depth to the broth.
Celery root
Adds earthy, aromatic flavor to the stock.

The step that matters

Clarify after straining. Cooling and removing fat before clarifying matters because residual fat and cloudy particles make the stock greasy and murky. Clarifying with egg white traps fine solids so the finished soup stays clear.

Swap the onion

How well each one fits the dish's main ingredients (meat, pepper, carrot, parsley, celery, clove, egg):
