Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms a roux with the dripping, thickening the stock into a smooth sauce.
Dripping
Provides fat for the roux and adds savoury richness to the sauce.
Stock
Forms the liquid base of the sauce, adding savoury flavour as it thickens.
Worcestershire sauce
Adds savoury, tangy depth to the finished sauce.

The step that matters

Whisking in the stock gradually. Adding liquid slowly to a roux and whisking constantly keeps starch granules dispersed, so the sauce becomes smooth instead of lumpy.

Swap the parsley

How well each one fits the dish's main ingredients (pepper, flour, sauce):

  1. Jalapenofits better
  2. Capersfits better
  3. Turmericfits about as well
