What each ingredient does

Chicken
Forms the whole structure, and the boned skin wraps the forcemeat filling.
Forcemeat
Fills the boned cavity, staying moist and firm as the bird cooks.
Slices of bacon
Lies over the breast to add fat that bastes the meat and adds savory flavor.

The step that matters

Remove the skin and flesh without tearing the inner lining. Skin that is torn or pierced lets filling leak out during filling and roasting, so the bird loses its shape. Working slowly and keeping the skin intact protects the stuffing and the presentation.
