Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main meaty substance of the patties, becoming tender after simmering.
Butter
Enriches the white sauce with fat, adding richness and smooth texture.
Flour
Thickens the butter and liquid into a white sauce that binds the filling.
Mushrooms
Add earthy flavor and moisture to the filling.

The step that matters

Simmering the sweetbreads in vinegar and salt. Simmering gently in acidulated, salted water firms and whitens the sweetbreads while keeping them tender. Boiling too hard can toughen the meat and break it apart.
