Stuffed Peppers

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the tops off the peppers and remove the seeds and membranes.

  2. Slice a small amount from the bottom of each pepper so they can stand upright.

  3. In a saucepan, melt the butter, then stir in the flour and salt to make a white sauce.

  4. Add the onion juice and milk to the sauce, then mix in the chopped meat.

  5. Fill each pepper with the meat mixture and top with buttered breadcrumbs.

  6. Place the peppers in a baking pan and add boiling water to the bottom.

  7. Bake at 350°F (175°C) for 30 minutes.
