Why it works: Mustard and vinegar are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 14,067 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Mayonnaise Dressing No. 1
Ingredients
Directions
Mix the mustard, salt, and cayenne in a bowl.
Add the unbeaten egg yolks and beat well with a wooden spoon.
Gradually add a few drops of olive oil while stirring steadily.
Continue adding oil until half is used, then alternate adding vinegar or lemon juice until all is incorporated.
If the dressing curdles, add a yolk of an egg and gradually mix in the curdled dressing until smooth.
