Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Roll puff paste into a long sheet ¼ inch thick.

  2. Cut into strips 1 inch wide and 16 inches long.

  3. Roll the strips around forms, overlapping the edges, and chill.

Bake and glaze

  1. Bake in a hot oven (400°F / 200°C) until well puffed and slightly browned.

  2. Remove from the oven and brush with beaten egg white diluted with cold water.

  3. Sprinkle with fruit sugar and return to the oven to brown.

Fill and serve

  1. Slip the paste from the forms and, when cold, fill with sweetened and flavored whipped cream.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff paste
Puffs up in the hot oven into light, flaky layers that form the shell.
Egg white
Brushed on before the final bake, it helps the surface brown and gives a glossy finish.
Fruit sugar
Sprinkled on top, it caramelizes in the oven for sweetness and browning.
Whipped cream
Fills the cooled shells, adding richness, moisture and a soft contrast to the crisp pastry.

The step that matters

Chilling the rolled strips. Chilling firms the butter in the puff paste before baking. Cold fat turns to steam in the hot oven, which lifts the layers; warm dough would spread and puff poorly.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
