Oatmeal Macaroons

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and add half of the sugar.

  2. Beat the yolks of the eggs, add the remaining sugar, and combine with the first mixture.

  3. Add the flavoring and fold in the stiffly beaten egg whites.

  4. Mix the rolled oats with baking powder and salt, then fold into the mixture.

Shape and bake

  1. Drop from a teaspoon onto a buttered baking sheet, two inches apart.

  2. Bake in a slow oven at 300°F (150°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks add richness and binding, while whipped whites lighten the batter and help it hold its shape.
Rolled oats
Provide the chewy, hearty body that forms the macaroon's texture.
Sugar
Sweetens the cookies and helps them brown during baking.
Baking powder
Releases gas that gives the macaroons a light rise.
Butter
Adds fat for flavor and a tender crumb.

The step that matters

Folding in the stiffly beaten egg whites. Egg whites hold air that gives lift. Stirring them in roughly or over-mixing deflates the foam, leaving dense, flat macaroons.
