Puff Paste

Ingredients

Directions

  1. Wash the butter in cold water until smooth and pliable, then pat dry.

  2. Reserve 1 tablespoon of butter and form the remainder into a cake. Chill it on ice.

  3. Place the flour on a cold plate, make a depression in the center, and add sugar, salt, reserved butter, and egg.

  4. Work the mixture into a paste with your fingertips, adding cold water to form a soft dough.

  5. Knead the dough until smooth and elastic, then roll it into a rectangular sheet.

  6. Cut the chilled butter into small pieces and place them on the lower half of the paste.

  7. Dredge the buttered area with flour and fold the upper half of the paste over the butter.

  8. Press the edges together, then pat and roll the dough into a long sheet, ¼ inch thick.

  9. Fold in the sides and then the ends to the center, turning the paste halfway around.

  10. Pat and roll as before, repeating this process until the dough has been rolled and folded six times.

  11. Chill the dough, shape it, and chill thoroughly again before baking.
