Strawberry Shortcake

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. Mix flour, fat, baking powder, milk, and salt as for Tea Biscuit.

  3. Toss the dough on a floured board and roll to ½ inch thickness.

  4. Shape into two rounds using a cookie cutter.

  5. Place the rounds together in a greased biscuit pan and bake for 15 minutes.

Prepare the strawberries

  1. Wash and hull the strawberries, saving the largest ones.

  2. Mash the remaining strawberries, sweeten with fruit sugar, and let stand for a short time.

Assemble and serve

  1. When the cake comes out of the oven, place it on a serving dish and remove the upper half.

  2. Spread the strawberries over the lower half, replace the upper half, and cover with mashed berries or whole berries dusted with fruit sugar.

  3. Serve with whipped cream.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the biscuit crumb as it bakes.
Fat
Adds tenderness and flakiness by keeping the dough short.
Baking powder
Releases gas during baking so the biscuit rises and becomes light.
Milk
Hydrates the flour to form a dough and adds moisture and browning.
Strawberries
Provide tart flavor and juicy moisture that soaks into the biscuit.
Fruit sugar
Sweetens the berries and draws out their juices.

The step that matters

Remove the upper half and assemble while the cake is warm. Warm biscuit absorbs the strawberry juices and softens slightly, while a fully cooled cake is firmer and less absorbent. Handling the split carefully keeps the layers from tearing and lets the berries soak in evenly.
