Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sweetness and caramel flavour, and its moisture helps form the fudge's soft texture.
Cream
Adds fat and moisture, making the fudge smooth and rich rather than brittle.
Chopped walnuts
Add crunch and a nutty flavour that contrasts with the soft fudge.

The step that matters

Cooking to the soft ball stage. Sugar syrup must reach the correct temperature to set properly. Too little cooking leaves fudge soft and runny, while too much makes it hard and grainy once cooled.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, cream, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
