What each ingredient does

Hen
Gives the broth its main body and rich flavor as it simmers slowly.
Tomatoes
Add acidity and a savory depth that rounds out the broth.
Noodles
Add starch and chew to the finished soup, softening as they sit in the broth.

The step that matters

Removing the scum. Scum is coagulated protein and impurities that rise as the water heats. Skimming it early keeps the broth clearer and cleaner in flavor.

Swap the onion

How well each one fits the dish's main ingredients (pepper, tomato, celery):

  1. Capsicumfits better
  2. Carrotfits better
  3. Okrafits better
  4. Onionthe original

Fit is the average pairing score against pepper, tomato, celery. Candidates are from the same food group and used in at least 100 recipes.
