Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Remove the meat from the crabs.

  2. In a bowl, beat together the egg yolks, butter, lemon juice, red pepper, salt, and Worcestershire sauce.

  3. Add the crab meat and finely chopped celery to the mixture.

Bake and serve

  1. When ready to serve, fold in the cream.

  2. Spoon the mixture into crab shells and bake at 400°F (200°C) until heated through.

What each ingredient does

Crab meat
Forms the main body of the filling and provides the seafood flavor.
Egg yolks
Add richness and help bind the filling into a smooth, creamy mixture.
Butter
Adds fat for a rich texture and helps the filling feel smooth.
Lemon juice
Adds acidity that brightens the rich filling and balances its flavor.
Cream
Folded in at the end to add moisture and a softer, lighter texture.

The step that matters

Fold in the cream just before serving. Cream added before baking can thin the filling and make it watery as it heats. Adding it at the end keeps the texture softer and more stable.

Swap the celery
