Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft-shell crabs
Provide the main protein, which cooks quickly to a tender interior and crisp coating.
Flour
Forms a thin dry coating that browns in the butter and gives a crisp crust.
Butter
Conducts heat for even frying and adds rich flavour and browning.

The step that matters

Sautéing the floured crabs. Flour coating can burn or turn pale and soggy if the pan is too hot or too cool. Medium-high heat in butter browns the coating while the crab cooks through, so a dry crab and an evenly heated pan matter.

Swap the parsley

How well each one fits the dish's main ingredients (crab, pepper, flour, butter):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Capersfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against crab, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
