Oyster Loaf

Oven, in the book's wordsA good oven

Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut a slice from the upper crust of the bread and scoop out the crumbs, leaving a crust like a bowl.

  2. Spread the inner side with butter.

  3. Fill with oysters, seasoned with salt, pepper, and chopped celery.

  4. Cover with the slice of crust to form a lid.

  5. Place in a pan and bake at 400°F (200°C) for 20 minutes, basting frequently with oyster liquor.

  6. Serve on a hot platter, slicing the loaf like bread.
