Veal Loaf
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 350°F (175°C).
In a bowl, combine the veal, salt pork, half of the crushed crackers, eggs, pepper, and salt. Mix well and shape into a solid loaf.
Spread the remaining crushed crackers over the outside of the loaf.
Bake and serve
Place the loaf in a baking dish with a little hot water.
Bake for one hour, basting two or three times.
Serve cold.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal
- Provides the main body and structure of the loaf as it cooks.
- Salt pork
- Adds fat that keeps the loaf moist and flavorful during baking.
- Eggs
- Bind the meat together so the loaf holds its shape when sliced.
- Crackers
- Absorb juices and fat, helping the loaf stay tender and moist.
The step that matters
Shaping the loaf solidly. The meat must be mixed well and packed firmly so the loaf holds together. Loose packing can let it crumble or dry out in the oven.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
