What each ingredient does

Strawberries
Provide the fruit body, flavor and color that the preserve is built from.
Granulated sugar
Draws out moisture and forms a thick syrup that sweetens and helps preserve the fruit.

The step that matters

Boil the syrup until thick and clear. The syrup must reach a high enough sugar concentration to thicken and keep the fruit preserved. Stopping too early leaves it thin and watery, while boiling too long can turn it dark or cause crystallization.
