Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut off the stems and remove the skins from the mushrooms.

  2. Chop the remaining 2 mushrooms and the onion finely.

  3. In a pan, fry the chopped mushrooms and onion in butter until light brown.

  4. Add salt, black pepper, and cayenne pepper to the mixture.

Stuff and bake

  1. Place 8 mushrooms inside up in a baking tin.

  2. Fill the 8 mushrooms evenly with the mixture.

  3. Dredge the tops with bread crumbs and dot with bits of butter.

  4. Bake in a hot oven at 400°F (200°C) until the mushrooms are tender.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Hollow caps hold the filling, and their moisture softens as they bake until tender.
Onion
Softens and sweetens as it fries, adding savory depth to the filling.
Butter
Browns during frying and enriches the filling, and melts over the tops to add richness.
Bread crumbs
Form a crisp, browned crust on top of the filling in the oven.

The step that matters

Frying the chopped mushrooms and onion until light brown. Frying drives off excess moisture and browns the sugars and proteins, so the filling tastes savory rather than watery and holds together when spooned into the caps.

Swap the onion
