Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough that holds the roll together.
Baking powder
Releases gas that lifts the dough so it becomes light rather than dense.
Butter
Adds fat that tenderises the dough and gives it a richer texture.
Milk
Hydrates the flour and helps form a soft, cohesive dough.
Berries
Provide moisture, tartness, and flavour in the filling.

The step that matters

Roll up the dough tightly and press the ends to seal.. A loose roll can unravel or let filling leak during steaming. Tight rolling and well-sealed ends keep the berries inside and the roll compact as it cooks.
