Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable body as it cools.
Heavy cream
Whipped into air bubbles, giving the sponge a light, airy texture.
Sugar
Sweetens the pineapple and thickens it as it cooks down.
Pineapple
Provides the main fruit flavor and a bright acidity that balances the sweetness.

The step that matters

Fold the whipped cream into the cooled pineapple mixture. If the gelatine mixture is still warm, the cream will deflate and lose its air. If it has already started to set, the cream will not blend evenly and will leave lumps. Cool it until it is thick and syrupy but still pourable.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Pineapplethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
