Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chocolate minute gelatine
Sets the milk into a jelly, giving the dessert its structure.
Walnut meats
Add crunch and nutty texture against the soft jelly.
Figs
Add chewy texture and natural sweetness.

The step that matters

Beating at the congealing stage. Beat it once it has begun to thicken but is still soft. If it is set firm, it will not whip into a light froth, and if it is too runny, it will not hold air or stay stiff.

Swap the fig

How well each one fits the dish's main ingredients (chocolate, milk, walnut, meat, cream):

  1. Vanillafits better
  2. Coconutfits better
  3. Figthe original
  4. Cherryfits less well

Fit is the average pairing score against chocolate, milk, walnut, meat, cream. Candidates are from the same food group and used in at least 100 recipes.
