Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Frozen Banana Whip

Ingredients

Directions

Prepare the base

  1. Run the peeled bananas through a sieve.

  2. Stir in the orange juice and powdered sugar.

  3. Soak the gelatin in cold water until softened, then melt it over a tea kettle.

  4. Strain the melted gelatin over the fruit mixture.

  5. When it begins to thicken, gently fold in the whipped cream.

Freeze

  1. Pour the mixture into a wetted mold and ensure the cover fits tightly.

  2. Cover with two layers of waxed paper or bind with a butter-dipped muslin strip.

  3. Bury the mold in a mixture of finely cracked ice and rock salt (2 parts ice to 1 part salt) for 2 hours.

  4. For a firmer texture, freeze for an additional 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the main fruit flavour and body of the whip.
Gelatin
Sets the mixture so it holds its shape when frozen.
Heavy cream
Adds richness and an airy, light texture when whipped and folded in.
Powdered sugar
Sweetens the mixture and dissolves easily into the fruit.
Orange juice
Adds acidity and bright citrus flavour to balance the sweetness.

The step that matters

Folding in the whipped cream. Fold gently once the mixture starts to thicken. If the gelatin has set too far, the cream cannot blend in and lumps form; if you stir hard, the whipped cream deflates and the texture turns dense instead of airy.

Swap the orange

How well each one fits the dish's main ingredients (banana, sugar, gelatin, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pineapplefits better
  4. Orangethe original

Fit is the average pairing score against banana, sugar, gelatin, cream. Candidates are from the same food group and used in at least 100 recipes.
