Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Melon Mousse
Ingredients
Directions
Prepare the melon
Place the pulp of the melon in a saucepan with half the sugar and stew until thick.
Rub the mixture through a sieve and return it to the stove.
Make the mousse
Dissolve the gelatine in a little cold water, then add ½ pint of boiling water and heat over steam until fully dissolved.
Stir the dissolved gelatine into the cooked melon until it begins to cool and thicken.
Pour the mixture into wetted molds and set on ice until firm.
Serve
Serve with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Melon pulp
- Provides the main flavour and body of the mousse.
- Sugar
- Adds sweetness and helps thicken the melon pulp as it stews.
- Gelatine
- Sets the mixture into a firm, sliceable mousse as it cools.
The step that matters
Stir the gelatine into the melon while it is still warm. Gelatine must be fully dissolved and mixed in evenly before the mixture cools too far. If it cools too much, it sets in lumps or unevenly, and the mousse loses its smooth texture.
Swap the nutmeg
How well each one fits the dish's main ingredients (sugar, cream):
- Nutmegthe original
- Cinnamonfits about as well
- Gingerfits less well
- Peppermintfits less well
Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
