Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter until smooth.

  3. Gradually add the sugar and mix well.

  4. Add the eggs one at a time, mixing after each addition.

  5. Fold in the flour gently.

  6. Cut the marshmallows into small pieces and fold them into the batter.

  7. Pour the batter into a greased cake pan.

Bake

  1. Bake for 30-35 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give the cake a tender, rich crumb.
Sugar
Sweetens the cake and helps the creamed butter hold air for lift and tenderness.
Eggs
Add structure and richness as they set in the baked crumb.
Flour
Forms the main structure that sets as the cake bakes.
Marshmallows
Melt and soften during baking, adding moisture and a chewy, sweet pockets.

The step that matters

Fold in the flour gently. Overmixing once flour is added develops gluten, which makes the cake tough and dense. Folding keeps the batter light and the crumb tender.
