Chocolate Nougat Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter in a large bowl.

  2. Gradually add the sugar and unbeaten eggs, mixing well.

  3. Add the flour and ⅔ cup of the milk, and mix until combined.

Add the chocolate and bake

  1. In a separate bowl, combine the melted chocolate with the remaining ⅓ cup of milk and cook until smooth.

  2. Cool the chocolate mixture slightly, then add it to the cake mixture.

  3. Fold in the shredded almonds.

  4. Bake in layers at 350°F (175°C) for 15 to 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Flour
Forms the main structure of the cake as its proteins set during baking.
Butter
Adds richness and tenderness by coating flour and shortening the crumb.
Sugar
Sweetens the cake and helps it brown and keep moisture.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Milk
Provides moisture that hydrates the flour and forms the batter.

The step that matters

Cool the chocolate mixture slightly before adding it. If the melted chocolate is still very hot, it can scramble the eggs or thin the batter unevenly. Cooling it slightly lets it blend smoothly into the batter.
