What each ingredient does

Granulated sugar
Dissolves into syrup that recrystallizes as a hard, sweet, crisp coating on the nuts.

The step that matters

Boil the syrup until a drop forms a ball in ice water. The sugar concentration set by boiling determines how the sugar recrystallizes on the nuts. Stopping too early leaves a sticky coating that stays soft, while boiling too long makes the coating brittle and prone to cracking.
