Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Sunshine Candy

Ingredients

Directions

Make the syrup

  1. In a saucepan, combine sugar, Karo syrup, and water. Cook over medium heat until it reaches the consistency of icing.

  2. In a separate bowl, beat the egg whites until stiff peaks form.

Combine and set

  1. Slowly pour the sugar mixture into the beaten egg whites while continuing to beat until nearly cool.

  2. Fold in the nuts until evenly distributed.

  3. Pour the mixture onto a marble surface and let it cool before cutting into pieces.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet, set body of the candy as the syrup cooks and cools.
Egg whites
Whipped to stiff peaks, they give the candy an airy, light texture.
Karo syrup
Interferes with sugar crystallization, keeping the candy smooth rather than grainy.
Nuts
Add crunch and body, distributed through the set candy.

The step that matters

Cooking the sugar syrup to icing consistency. Cooking the syrup to the right stage controls how firm the candy sets. Undercooked syrup yields a soft, sticky result, while overcooked syrup sets too hard. Beating the hot syrup into the whites while still warm helps the mixture hold its airy structure.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, syrup, egg):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, syrup, egg. Candidates are from the same food group and used in at least 100 recipes.
